Crispy Potato Chips
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 6 nos Potatoes : 5
- Salt, to taste
- 2 tsp Red chilli powder : 1 if necessary
- Refined / coconut oil : as reqd to fry the chips
Preparation
Step 1
Peel the potatoes.
Step 2
Cut the potatoes in thin size (or in the thickness as needed) into the water as shown in below picture.
Step 3
Put some salt in the water and keep the sliced potatoes in this salt water for about 15 minutes (this helps to remove starch from potatoes to some extend and also after frying the chips, it is not necessary to add salt).
Step 4
Then remove the water and allow it dry for about an hour (make sure that the potatoes are dried well otherwise it will spatter at the time of putting into the hot oil and create unnecessary problems).
Step 5
Heat the oil in a frying pan and put the dried potato slices into it and stir it.
Step 6
When the colour of the chips turns into golden, remove it from the frying pan and serve it with coffee / tea or any other drinks.
Step 7
If you want to make the chips spicy then add some red chilli powder also and mix it well.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
