Crispy Parippu Vada | Chana Dal Vada
Parippu Vada, also known as Chana Dal Vada, is a beloved South Indian snack that holds a special place in the hearts of many.
Ingredientsfor 4 servings
- 1 cup Chana dal Kadala Parippu
- 6 nos Shallots
- 3 nos Dried Red chilly
- Curry leaves, a few
- 1 tsp Kashmiri chilly powder
- 2 pinch Asafoetida powder (Kayam)
- Oil — for frying
- Salt, to taste
Preparation
Step 1
Wash and soak Chana dal for about 2 to 4 hours.
Step 2
Transfer to a colander and drain the water completely. Now add shallots, dried red chilly and curry leaves.
Step 3
Add Kashmiri chilly powder and salt.
Step 4
Get a blender and blend shallots, dried red chilly and curry leaves first.
Step 5
Next, add Chana dal along with salt and Kashmiri chilly powder.
Step 6
Grind it coarsely.
Step 7
Stir everything together thoroughly to form a smooth and little crumbly mixture. Add little water only if needed. Now grease your palms with some oil and divide the mixture in equal parts in a round shape. Press a little to make small patties.
Step 8
Next, heat some oil in a wok on medium heat and fry in hot oil the vadas until golden brown.
Step 9
Serve while still hot with tea.
Tip
The binding point is everything — cook the mixture just until it holds shape when pressed. Overcooked, it turns hard; undercooked, it crumbles.
