Crispy Banana Fry
Kerala-style dry fry where banana is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 3 servings
- Banana : 1 no
- Corn flour : 2 tsp
- All purpose flour : 3 tsp
- Oats : 1 cup
- Sugar : 1 tsp
- Salt : ½ tsp
- Water, to taste
- Oil, to taste
Preparation
Step 1
Slice banana in to pieces.
Step 2
Mix corn flour, all purpose flour using water and add sugar and salt, then beat it well.
Step 3
Mix sliced banana with this mixture and then mix with oats.
Step 4
Then heat a pan add oil in it and fry the banana when it gets hot.
Step 5
Make the both sides brown.
Step 6

Step 7
Wipe off excess oil and serve hot with tea or coffee.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
