Creamy Chicken Flavoured With Saffron
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 400 g Chicken breast boiled and shredded - reserve the chicken broth
- 11/2 cup Chicken broth
- 2 nos Green chilly — sliced
- 2 tbsp Cooking oil
- 2 nos Red onions — chopped
- 1 tsp Garlic — chopped
- 1 tsp Ginger — chopped
- 2 nos Tomatoes — chopped
- 1 cup Milk
- 7 piece Cashew nut – 6 — soaked in warm water
- 2 tsp Kashmiri chilly powder
- 2 tbsp Chicken masala powder
- 1/4 tsp Turmeric powder
- Whole masalas
- 1 Pcs Star anise
- 1 piece Clove
- 1 piece Green cardamom
- Pepper corns, a few
- 1/2 tsp Saffron strands — soaked in warm milk
- 1/2 cup Tomato puree
- 50 ml Fresh cream
- 1 tsp Sugar or honey
- Salt, to taste
- 1/2 tsp Dry fenugreek leaves
Preparation
Step 1
Heat the oil in a sauce pan, add cardamom, clove, pepper corn, star anise and Let it cook for 2 minutes.
Step 2
Add onions, ginger, garlic, green chillies and chopped tomatoes.
Step 3
Stir for a while till the onions and tomatoes are soft and blended, about two minutes.
Step 4
Stir in chicken masala powder, chilly powder, tomato puree, turmeric and fry till fragrant for a few seconds.
Step 5
Cool the contents and grind it with cashews soaked in water to a fine paste.
Step 6
Empty the ground paste into a saucepan.
Step 7
Add shredded chicken, chicken broth, milk, salt and slowly Bring to a rolling boil. Reduce heat and simmer for 10 minutes.
Step 8
Add saffron soaked in milk, honey or sugar, kasoori methi and fresh cream.
Step 9
Stir and check for seasoning. Turn off the heat.
Step 10
Garnish with coriander leaves and Serve right away. :- Serve with hot naan or parantha.
Step 11
Note:- Broil kasoori methi on a tawa/griddle plate till fragrant and crush it between your palms. Add it to the dish.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
