Coconut Rice In Kerala Style
Coconut Rice in Kerala Style is a homely and very popular delicacy in South Indian homes usually served with any curry as an accompaniment.
Ingredientsfor 2 servings
- 1 cup Basmati rice — drained, soaked in water for 15 minutes and
- 2 small Cinnamon (Karugapatta)
- 3 nos Cloves (Grambu)
- 3 nos Cardamom (Elakka)
- 1/2 cup Onion — finely sliced
- 2 nos Green chillies — crushed
- 1/2 tsp Ginger — ground
- 1/2 tsp Garlic — ground
- 1 cup Coconut — grated
- 1/4 tsp Turmeric powder
- 1 tbsp Ghee
- Curry leaves, a few
- Salt, to taste
- 1/2 cup Onions — finely sliced
- Cashew nuts, to taste
- Raisins, as needed
- 1 tbsp Ghee
- 1 tbsp Coconut oil
Preparation
Step 1
For preparing coconut rice in kerala style, first add 2 cups water to the grated coconut and blend well in a mixer and sieve to extract 2 cups of coconut milk.
Step 2
Heat ghee in a wide bottomed pan and fry cinnamon, cloves and cardamom for a few seconds.
Step 3
Add crushed green chillies, curry leaves and onions. cook for a few minutes until onion has softened.
Step 4
Add ground ginger and garlic and fry for a few minutes. When a frying smell comes add previously drained basmati rice.
Step 5
Fry the rice for a few minutes and stir in turmeric powder and required salt.
Step 6
Pour extracted coconut milk into the rice and allow to boil.
Step 7
Cover with a lid and cook in low flame until rice is done and water has evaporated completely.
Step 8
For garnishing coconut rice in kerala style, heat ghee and coconut oil in a pan. Fry cashew nuts, raisins and remove from fire. Fry onions to a golden brown color and remove from fire.
Step 9
Coconut rice in kerala style is ready and garnish with cashew nuts, raisins and fried onions.
Step 10
Tips:- 1)For accuracy, use the same cup for measuring basmati rice and coconut milk.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
