Coconut Egg Pudding
Egg mixture mixed with coconut milk, ground cardamom, other ingredients and cooked in a pressure cooker to prepare coconut egg pudding, kids favorite recipe.

- 2 nos Eggs
- 1 cup Coconut milk
- 3 tbsp Sugar
- 2 nos Cardamom — ground (Elakka)
- Salt A pinch
- 2 tbsp Butter
Preparation
Step 1
For preparing coconut egg pudding, blend together eggs, butter and sugar to a frothy cream.
Step 2
Mix egg mixture with coconut milk, ground cardamom and a pinch of salt.
Step 3
Cook this mixture in a pressure cooker for 20 minutes.
Step 4
Coconut egg pudding, a lip smacking dessert ed by kids, is ready.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
