Coconut Chammanthipodi

Ingredientsfor 4 servings
- Coconut : 4 nos
- Black gram : 50 gm
- Sambar Parippu (dal) : 50 gm
- Coriander Leaves : 2 leaves
- Tamarind : lemon sized
- Chilly powder : 1 tsp
- Coriander powder : 1 tsp
- Salt, to taste
Preparation
Step 1
Heat a suitable pan to accommodate the grated coconut. (Should not add oil in pan).
Step 2
Roast the coconut in the pan till it turns into brownish color.Transfer the roasted coconut from the pan.
Step 3
Add a tsp of oil in pan. Add coriander leaf. Add Sambar parippu & uzhunnu.5) Roast the uzhunnu & sambar parippu till it turns into brown.
Step 4
Transfer the roasted uzhunnu & Parippu from the Pan.
Step 5
Fry the Tamarind in the pan.
Step 6
Roast the Coriander powder & chilly powder.
Step 7
Powder the roasted Uzhunnu, parippu & Tamarind in a mixer. Set aside the powder.
Step 8
Powder the roasted coconut and roasted chilly & coriander powder.
Step 9
Mix the roasted coconut powder & Uzhunnu & parippu powder in a polybag for 3-5 minutes.
Step 10
Coconut chammanthipodi ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
