Coconut Banana Balls

Ingredientsfor 4 servings
- 1 kg Banana
- 1 cup Coconut — grated
- 3 tbsp Sugar
- 1 cup Bread crumbs
- 2 Egg
- 5 nos Cashew and raisins
- 1 pinch Cardamom powder
- 1 tbsp Ghee
- Oil — for frying
Preparation
Step 1
Boil the banana,peel off the skin and mash well with a wooden spoon.
Step 2
Heat ghee in a pan and stir fry coconut(grated),cashew,raisins,sugar,cardamom powder for 4-5 minutes and take it off the heat.
Step 3
Divide the mashed bananas into evenly sized small balls,press a little with the help of a thump and stuff the coconut filling and shape into a ball.
Step 4
Whisk egg in a bowl,dip the balls in egg and followed by bread crumbs.Heat the oil in a pan and fry until golden brown.
Step 5
Crispy coconut banana ball is ready.
Tip
Good shallots are the backbone of Kerala cooking. They should be small, pink-purple, and strong-smelling. Large onions can substitute, but the flavour will be different.
