Chow Chow Upperi
A kerala dish made with rare vegetable chow chow. It can be served with rice.
Ingredientsfor 4 servings
- 4 To Chow chow
- 1 Tspn Turmeric Powder
- ½ Tspn Asafoetida Powder
- 2 Tspns Mustard Seeds
- 4 To Chopped Red Chilli pieces
- 5 To Curry leaves
- Salt, to taste
- 1 Tspn Red Chilli Powder
- 1 Tspn UzhunnuParippu Black gram dhal
- 2 To Coconut or Refined Oil
Preparation
Step 1
Peel the Chow-chow and cut them into small pieces, wash the pieces and set aside.
Step 2
Heat the oil in a frying pan (Kadai).
Step 3
Add UzhunnuParippu (Blackgram dhal) into the hot oil.
Step 4
Add chopped Red Chilli pieces, Curry leaves and Turmeric Power into this mix and stir it for 30-50 seconds.
Step 5
Add the Chow-chow pieces and stir it.
Step 6
Cover the frying pan (kadai) with a lid or plate and allow to cook the Chow-chow in the steam (do not add water in the mix).
Step 7
Chow-chow Upperi is ready and it can be served as a side dish for lunch/dinner.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
