Chocolate Cake
Old-fashioned Kerala sweetmaking — no shortcuts, no substitutes. Jaggery, ghee, and coconut come together through slow cooking and patience into something far greater than the sum of their parts.
Ingredientsfor 10 servings
- 175 g Allpurpose flour Maida
- 400 g Condensed Milk
- 5 tbsp Cocoa powder
- 1½ tsp Soda
- 1½ tsp Baking powder
- 2 tbsp Sugar — powdered
- 125 g White Butter home made
- 200 ml A bottle of Pepsi or Coke
Preparation
Step 1
Sieve maida, cocoa, baking powder and soda together.
Step 2
Mix sugar, butter and condensed milk in a pan and beat well.
Step 3
Add half of the sieved mixture and half of the cola to it and beat well.
Step 4
Add the left over cola and the sieved mixture and beat well again.
Step 5
Get a cake tin and grease it with butter.
Step 6
Put butter paper according to its size and dust lightly with flour.
Step 7
Bake it in a hot oven at 150ªC/300ªF for 35-40 minutes. (If a knife is inserted in the center of the cakeand it comes out clean, remove from the oven after 5 minutes.).
Step 8
Makes Cake of approx. 2 pounds.
Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
