Chocolate Brownie
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 100 g Butter
- 200 g Sugar
- 6 tbsp Cocoa powder
- 100 ml Milk
- 150 g All purpose flour Maida
- 2 nos Eggs
- 50 g Walnuts i uses cashew nuts — chopped
Preparation
Step 1
For preparing chocolate brownie, first mix butter, sugar, cocoa and milk in a saucepan. Heat on low heat till the butter melts and all the ingredients are well blended.
Step 2
Switch off the heat and let it cool. Add rest of the ingredients: maida, beaten eggs and Stir everything together thoroughly.
Step 3
Pour into a greased pan and bake in a preheated oven at 180C for 25 minutes. Cool and cut into squares.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
