Chicken Vineger
A robust chicken preparation where the meat absorbs a pounding of Kerala spices and slow-cooked onions. The curry leaves and coconut oil make it unmistakably from this part of the world.
Ingredientsfor 5 servings
- 1 nos Whole chicken
- 11/2 cup Vinegar
- 1/3 tsp Chilly powder
- 1/3 tsp Salt
- 2 tbsp Oil
- 1 nos Potato peeled and — cut into four pieces
Preparation
Step 1
Make cuts on the chicken.
Step 2
Mix salt and chilly powder together and rub it on the chicken.
Step 3
Marinate this chicken in vineger and set aside for atleast four hours. Over night marination would be the best.
Step 4
Put oil and potatoes in it and cook on a low heat for atleast 45 minutes.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
