Chicken Thoran - Kerala Style
Finely chopped chicken stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 2 servings
- 1 cup Boneless chicken
- Pepper powder A pinch
- 1 nos Onions — chopped
- 1/2 cup Coconut — grated
- 1/2 tsp Chilly powder
- 1 tsp Coriander powder
- 1/4 tsp Turmeric powder
- 1 tsp Masala powder
- 2 tbsp Oil
- Salt, to taste
- 2 nos Red chillies (Kollamulaku)
- 1 tsp Mustard seeds
- 10 sprig Curry leaves
Preparation
Step 1
Cook the chicken with a pinch of salt and pepper on low heat, adding an ounce of water, if necessary, till the chicken is almost cooked and the gravy is absorbed. Shred the chicken into small pieces.
Step 2
Grind together coconut, chilly powder, coriander powder, turmeric powder, masala powder and 4 sprigs of curry leaves into a coarse form.
Step 3
Heat the oil in a shallow pan on a low flame.
Step 4
Add the broken red chillies and mustard seeds.
Step 5
When the seeds allow to crackle, add the remaining curry leaves and sautT for a moment.
Step 6
Add the chopped onion and sautT, till it turns soft and transparent.
Step 7
Add the cooked chicken and sautT for a minute.
Step 8
Add the ground coconut mixture and salt and give it a good stir.
Step 9
Put the lid on and cook on very low flame for about 2 minutes.
Step 10
Open and stir and take it off the heat.
Step 11
Serve while still hot with plain rice and curry.
Tip
This same method works for almost any vegetable: beans, beetroot, carrot, raw banana — swap the main vegetable and keep everything else the same.
