Chicken Pacha Masala
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 5 servings
- 2 kg Chicken
- 2 nos Onion sliced, big
- 11/2 inch Ginger
- 6 nos Garlic pods
- 3 - Green chillies
- 1 tbsp Whole pepper
- 3 - Cloves (Grambu)
- 3 - Cinnamon sticks (Karugapatta)
- 1/2 tsp Fennel seeds Perinjerakam
- 2 nos Ripe medium tomatoes
- 2 tbsp Coconut grated or cut
- 1 tbsp Coriander powder
- 1/2 tsp Turmeric powder
- Salt, to taste
Preparation
Step 1
Heat 1 spoon of oil in a pan.
Step 2
Add onion, ginger, garlic, chillies, whole pepper, cloves, cinnamon, fennel seeds, tomatoes and coconut and cook until its turns tender.
Step 3
Once it cools, grind the mixture to a fine paste.
Step 4
Pour oil in a pressure cooker.
Step 5
Add half sliced onion and sauté.
Step 6
When it turns light brown, add the ground masala.
Step 7
Cook the masala till it turns dry.
Step 8
Add the coriander and turmeric powder.
Step 9
Add salt and some water followed by the chicken and Stir everything together thoroughly.
Step 10
Pressure cook it.
Step 11
If the gravy is not thick, boil it for some time.
Step 12
Serve while still hot with rice or chapathi.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
