Chicken Mulaku Bajji
Deep-fried until the outside shatters at the first bite and the inside stays soft and flavourful. A tea-time favourite across Kerala, especially when the monsoon rain is hammering the roof.
Ingredientsfor 5 servings
- Bajji chilly : 6 nos
- Chicken minced : 150 gm
- Onion (chopped) : 1 medium
- Curry leaves : 1 no
- Kadala Mavu (Besan) : ½ cup
- Tomato sauce : 2 tsp
- Pepper powder : 1 tsp
- Salt, to taste
Preparation
Step 1
Set a pan over medium heat and pour in the oil and add onion and curry leaves.
Step 2
Add chicken into it and fry till chicken is completely ready.
Step 3
Drain it to remove oil.
Step 4
Mix Kadala Mavu (besan), salt and tomato sauce with water to make a batter.
Step 5
Cut chilly on one side to get an opening for filling Chicken into inside.6) Fill the drained chicken from step 5 in each Chilly as shown in the below picture.
Step 6
Dip each chicken filled chilly into the batter.
Step 7
Fry chilly dipped in the batter from step 7 in oil one by one.
Step 8
9) Fry till a golden brown color is obtained.
Step 9
Chicken mulaku bajji (Chicken Chilly Bajji) is ready.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
