Chicken Kabab
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 1 kg Chicken
- 2 tsp Kabab masala powder
- 3/4 tsp Chilly powder
- 1/2 tsp Turmeric powder
- 1/2 tsp Pepper powder
- 1 nos Egg
- Salt approx 1 tsp
- 3 tsp Vinegar
Preparation
Step 1
Clean the chicken (cut into small pieces) and drain the water in it.
Step 2
Mix together the rest of the ingredients and add the chicken pieces to it and Stir everything together thoroughly.
Step 3
Marinate this at least for 2 - 3 hours.
Step 4
Pour oil into a pan and heat it and fry the pieces.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
