Chicken In Coconut Milk Masala
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 3 servings
- 500 g Chicken
- 2 nos Potato — chopped
- 1 tbsp Ginger — grated
- 5 nos Green chillies — chopped
- 3 nos Onion — sliced
- 2 nos Tomato — sliced
- 2 tbsp Chilly powder
- 2 tsp Cumin powder
- 1 tsp Turmeric powder
- 1 tsp Garam masala
- 2 tsp Chicken masala
- 3 tbsp Coconut milk powder
- Salt, to taste
- Curry powder, a few
- Coconut oil, to taste
Preparation
Step 1
For preparing chicken in coconut milk masala, first mix ginger, chicken, green chillies, salt and potato.
Step 2
Cook chicken with salt and water in a covered pot.
Step 3
Heat another pan, add oil.
Step 4
Add garam masala, onion and fry till brown.
Step 5
Add tomato, chilly powder, turmeric, chicken masala and curry leaves.
Step 6
Fry till masala is well cooked.
Step 7
Mix coconut powder in warm water and pour it to masala.
Step 8
Add cooked chicken pieces in it and coat well.
Step 9
Make it a semi masala.
Step 10
Chicken in coconut milk masala is ready.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
