Chicken Gravy (Step By Step Photos)
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 2 servings
- 250 Grmas Chicken
- 1 Ts Pepper
- 2 Thin Ginger
- ½ Ts Fennel seeds
- Garlic 6 to 8 pods
- 2 Cardamom
- ½ Ts Turmeric powder
- 1 ½ Chilli powder
- Coriander powder 1 ts
- 2 Tomato
- 1 Onion
- Coriander, to taste
Preparation
Step 1
In a mixer add pepper, ginger, garlic, fennel seeds and cardamom.
Step 2
Grind it well by adding water.
Step 3
In a vessel, add water and chicken and cook.
Step 4
Add the grounded mixture.
Step 5
Add turmeric powder, chilli powder and coriander powder.
Step 6
Let it cook.
Step 7
In the mean time grind the tomato and onion.
Step 8
Add the tomato onion mixture to the chicken.
Step 9
Cook till the water drains off and the chicken is soft and it comes to a thick consistency. This would take 10 minutes. Give it a stir now and then to avoid burning.
Step 10
Serve while still hot with rice or pulav or fried rice.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
