Chicken Darky
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 5 servings
- 1 kg Chicken
- 1 cup Curry leaves
- 1 tsp Fenugreek roasted and — ground (Uluva)
- 3 nos Onion — sliced
- 2 tbsp Coconut oil
- Ginger garlic paste - 2 tbsp
- 3 nos Tomato extract puree
- 2 tbsp Kashmiri chilly powder
- 1 tsp Turmeric
- Salt, to taste
Preparation
Step 1
Pour oil into a pan and heat it and fry curry leaves till crispy. Drain and set aside.
Step 2
To the same oil, add ginger-garlic paste and sauté.
Step 3
Add onions and fry till they turn light brown.
Step 4
Add chilly powder, turmeric and let it fry for a minute.
Step 5
Add the chicken pieces and stir.
Step 6
Add tomato puree, Stir everything together thoroughly and close with a lid.
Step 7
When the chicken is fully cooked, add the fried curry leaves and fenugreek. This gives a special taste to the curry.
Step 8
Goes well with chappathis or rice.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
