Chicken Chuttathu In Kerala Style
A robust chicken preparation where the meat absorbs a pounding of Kerala spices and slow-cooked onions. The curry leaves and coconut oil make it unmistakably from this part of the world.
Ingredientsfor 5 servings
- Chicken thighs or breast : 5 pieces
- Tomato : 1 no
- Onion : 1 no
- Garlic : 6 cloves
- Chilly powder : 2 tsp
- Garam masala : 1 tsp
- Salt, to taste
Preparation
Step 1
Make a paste of tomato, garlic and onion.
Step 2
Next, add the spices and salt to this and add this paste to the chicken parts.
Step 3
Place the chicken under a medium hot grill or barbeque for 30 minutes,turn and repeat until meat is cooked, or keep in oven and heat for 20 minutes.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
