Chicken Cheese Sandwich
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 1/2 kg Fried chicken
- 1 nos Capsicum
- 2 tbsp Cheese or mayonnaise
- Coriander leaves
- 2 nos Tomato small
- Salt, to taste
- 1 nos Onion small
- 1 tbsp Tomato sauce
- Bread, to taste
Preparation
Step 1
Place all the ingredients in a mixer grinder except bread pieces and tomato sauce.
Step 2
All the ingredients are to be shredded and blended together.
Step 3
Add tomato sauce and blend again until it becomes a paste.
Step 4
Do not add much water.
Step 5
Spread this on toasted or plain bread.
Step 6
Usually I make this from left over chicken, maybe 2 or 3 pcs which is too less for a main course for a family but for the sandwich, you can have more.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
