Chena Muringayila Thoran | Yam Drumstick Leaves Stir Fry
Simple, honest, and on every Kerala lunch plate — drumstick thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 4 servings
- 2 cup Elephant yam(Chena — chopped
- 1/2 tsp Turmeric powder
- Salt, to taste
- 1 tbsp Oil
- 1 tsp Mustard seeds
- 3 nos Dried Red chilly
- 1 Cup Drumstick leaves
- 1 cup Coconut
- 1 no. Green chilly
- 2 nos. Shallots
- 1/2 tsp Cumin seeds
Preparation
Step 1
Cut the elephant yam into small cubes and wash it thoroughly. Cook it in enough water by adding turmeric powder and salt. Set aside.
Step 2
Warm the oil in a pan and add the mustard seeds. When they pop, add dried Red chilly and cleaned drumstick leaves. (Remove the drum stick leaves from the stems. Wash thoroughly before cooking).
Step 3
Add ground coconut mixture (Grind coconut coarsely with the shallots, green chilly and cumin powder)and give it a good stir again for 2-3 minutes.
Step 4
Finally add cooked chena(elephant yam) and Fold everything together gently. Cover and Let it cook for 2 minutes and turn off the heat.
Step 5
Chena Mmuringayila Thoran is ready.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
