Chemmeen-Prawn Varattiyathu
Pan-fried until the edges go dark and crispy, this prawn fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 6 servings
- 450 g Chemmeen/prawn
- 1 cup Coconut milk
- 2 nos Onion — chopped
- 4 nos Tomato — chopped
- 2 tsp Ginger — chopped
- 2 tsp Garlic — chopped
- 1/4 tsp Mustard seeds
- 1/4 tsp Cumin seeds (Jeerakam)
- 1/4 tsp Fenugreek seeds (Uluva)
- 8-10 Leaves Curry leaves
- 4-5 nos Red chilly
- 2 tsp Pepper powder
- Thyme one pinch
- 1/4 tsp Turmeric powder
- 1/4 tsp Red chilly powder
- 1/4 tsp Coriander powder
- Coriander leaves, a few
- 2 piece Kudampuli Gamboge
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Warm the oil in a pan and allow to crackle cumin seeds.
Step 2
Add fenugreek seeds, red chilly, curry leaves and fry well.
Step 3
Add chopped onion and fry till light golden brown colour.
Step 4
Add ginger, garlic and Continue cooking for 1 to 2 minutes.
Step 5
Add red chilly powder, turmeric powder, coriander powder and cook until raw smell goes.
Step 6
Add chopped onions and cook well till it is cooked.
Step 7
Add prawns and kudampuli into it and Let it cook for 5 minutes.
Step 8
Mix half a cup of coconut milk with half a cup of water and pour into it and add required amount of salt.
Step 9
Simmer and cook for another 20 minutes or till the it is half dry.
Step 10
Stir in the remaining coconut milk and Stir everything together thoroughly till it it is almost dried.
Step 11
Add pepper powder, hyme, and coriander leaves.
Step 12
Switch of the flame and mix it well and keep closed. Serve hot!
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
