Chemmeen Achar
The very mention of Achar is drooling especially Chemmeen Achar. In Kerala, Achar or Pickle accompanies all meals. Pickles can be prepared from almost all fruits and vegetables.
Ingredientsfor 50 servings
- 1 kg Prawns medium sized
- 3/4 Th Garlic
- 1/4 Th Ginger — sliced
- Green Chillies — slit
- Gingelly oil, to taste
- Salt, to taste
- Chilly powder, to taste
- Vinegar Little
Preparation
Step 1
For preparing Chemmeen Achar, first marinate the prawns with chilly powder and salt for 30 minutes.
Step 2
Pour oil into a pan and heat it or a kadai.
Step 3
Fry garlic lightly in it and set aside.
Step 4
Fry ginger in the same oil and set aside too.
Step 5
Fry prawns and set aside.
Step 6
You can fry in hot oil it, if you want to keep it for a long time.
Step 7
Fry some green chillies in the same oil.
Step 8
Mix together required chilly powder and vinegar to a paste and fry this in the remaining oil.
Step 9
Add all the above fried ingredients into this and Stir everything together thoroughly.
Step 10
Allow Chemmeen Achar to cool.
Step 11
If you want more gravy, add cooled boiled water.
Step 12
Store Chemmeen Achar in bottles.
Tip
The jar must be completely dry and the spoon must be clean every time you take from it. Any moisture introduces bacteria and spoils the pickle.
