Channa Cutlet Easy
Coated in a well-seasoned batter and fried to a deep golden colour — the crunch is the whole point. Serve with a cup of strong black tea and watch them disappear.
Ingredientsfor 4 servings
- 1 cup Channa You can use white or black, Kadla
- 1 nos Onion — finely chopped
- Ginger — finely chopped
- Green chillies — finely chopped
- 1 cup Rusk powder
- 5 tbsp Allpurpose flour Maida
- Salt, to taste
- Oil — for frying
Preparation
Step 1
Soak channa in cold water for about 8 hours.
Step 2
Pressure let it go for about 15 minutes.
Step 3
Smash the cooked channa well and set aside.
Step 4
Mix together smashed channa, 1/2 cup of rusk powder, onion, green chillies, ginger and salt.
Step 5
Mix 5 tbsp of maida with water and make it into a semisolid paste.
Step 6
It should not be watery.
Step 7
Make small balls off the channa mixture and and press it lightly.
Step 8
Roll it in the remaining rusk powder.
Step 9
Fry in hot oil them in hot oil.
Tip
Drain on a wire rack instead of paper towels — the rack keeps the bottom from getting steamy and losing its crispness.
