Chammanthi Chor | Coconut Chutney Rice
Coconut is a versatile ingredient in South Indian cuisine, and one of the most cherished dishes that brings out its true essence is Chammanthi Chor.
Ingredientsfor 2 servings
- 1½ cup Cooked rice
- 2 nos Egg
- 5 nos Shallots — chopped
- 1 nos Green chilly — chopped
- Curry leaves, a few
- Salt, to taste
- 1 tsp Coconut oil
- 1 cup Coconut — grated
- 5 nos Shallots
- 2-4 nos Dried Red chilly
- Salt, to taste
Preparation
Step 1
Get the ingredients under the header, 'For Preparing Coconut Chutney" in a grinder. Grind into a coarse paste or texture. Set aside.
Step 2
Heat the oil in a wide pan and add chopped shallots, green chilly and few curry leaves. stir for a few seconds.
Step 3
Add two eggs and little salt.
Step 4
Scramble the egg in low to medium flame for 1 minute.
Step 5
Next, add the ground chammanthi.
Step 6
And cooked rice.
Step 7
Fold everything together gently and cook for few minutes and take it off the heat.
Step 8
Serve.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
