Chakkakuru Thoran
Finely chopped jackfruit stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 3 servings
- 1/2 kg Chakkakuru Jackfruit seeds
- 1/4 tsp Turmeric powder
- 1/4 Of Coconut
- 4 nos Green chillies
- 1/4 tsp Cumin seeds (Jeerakam)
- 4 nos Garlic cloves
- Salt, to taste
- 1 tsp Mustard seeds
- Curry leaves A fw
- 2 Dry red chillies (Kollamulaku)
Preparation
Step 1
For preparing Chakkakuru/Jackfruit Seeds Thoran, first remove the skin off the seeds and cut it into two and then into small pieces.
Step 2
Place grated coconut, cumin seeds, green chillies, garlic and curry leaves in a mixer bowl and run it once to get a coarse form.
Step 3
Cook chakkakuru/jackfruit seeds along with turmeric powder, salt and a little water in a vessel.
Step 4
When it is cooked, take it off the heat. Add the coconut mixture into the cooked seeds and Stir everything together thoroughly.
Step 5
Set a pan over medium heat and pour in the oil and let the mustard seeds crackle and cook dry red chillies, rice and curry leaves. Add the chakkakuru coconut mixture and Stir everything together thoroughly.
Step 6
Lower the flame and allow it to cook, stirring occasionally. take it off the heat when done.
Step 7
Chakkakuru thoran is ready.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
