Chakka Varatti | Chakka Varattiyathu | Jackfruit Jam
This jackfruit, also known as Chakka Varattiyathu or Jackfruit Jam, is a delicacy from the southern state of Kerala, India.
Ingredientsfor 10 servings
- 2 cup Ripe Jackfruit
- 1 cup Jaggery
- 1 cup Coconut milk
- 1/2 tsp Cardamom powder
- 2 tbsp Ghee
Preparation
Step 1
Remove the seeds of very ripe jackfruit.
Step 2
Transfer to a bottom thick sauce pan.
Step 3
Add coconut milk and start heating. Cook the jackfruit in coconut milk for 10-15 minutes.
Step 4
Next, add melted jaggery and Give it a stir now and then. Let it thicken.
Step 5
When it starts to thicken, add ghee at intervals. Keep mixing.
Step 6
Add cardamom powder and keep cooking and stirring.
Step 7
At one stage it will not stick to the pan and come together as a rolling ball. This is the right stage, turn off the heat.
Step 8
Chakka Varatti is ready.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
