Chakka Kuru (Jackfruit Seeds) Achar
A tangy, spicy condiment that keeps for weeks and adds a sharp kick to any Kerala meal. Made with care and stored in a clean jar, this pickle gets better as the days pass and the flavours meld together.
Ingredientsfor 2 servings
- 10 nos Jackfruit seeds
- 2 nos Green chilly
- 1 tsp Ginger
- 2 tsp Chilly powder
- 2 tbsp Oil
- Salt, to taste
- 1 tsp Fenugreek seeds powder
Preparation
Step 1
Cut jackfruit seeds, green chilly and ginger into small pieces.
Step 2
Heat the oil in a vessel.
Step 3
Cook jackfruit seeds, green chilly and ginger with salt for 10 minutes.
Step 4
Add chilly powder, minced fenugreek seeds and mix it well.
Step 5
Allow it to cool.
Step 6
Add 2 tsp vinegar and Stir everything together thoroughly.
Step 7
Serve it after 2 days.
Tip
The jar must be completely dry and the spoon must be clean every time you take from it. Any moisture introduces bacteria and spoils the pickle.
