Chakka Kuru (jack Fruit Seed) Manga Curry
A deeply satisfying chakka kuru (jack fruit seed) manga curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 4 servings
- 15 nos Chakka kuru jack fruit seed
- 2 nos Pacha manga raw mango
- 4 nos Green chilli
- 8 nos Shallots
- 1/ 2 tsp Turmeric powder
- 1 tsp Chilli powder
- 1/4 cup Coconut — grated
- 1/ 4 tsp Mustard
- 3 tbsp Dried prawns
- 3 tbsp Coconut oil
- Curry leaves
- Salt, as needed
Preparation
Step 1
Pressure cook the chakka kuru with turmeric, chilli powder, green chillies, required water and salt.
Step 2
Grind the grated coconut with 3 shallots and set aside. Open the pressure cooker, add raw mango pieces and the ground coconut mixture to it, keep stirring.
Step 3
Roast the dried prawns and powdered it or crushed it.Add this to the curry, stir it.When the curry starts to boil, turn off the heat.
Step 4
Warm coconut oil in a pan, allow to crackle mustard, fry chopped shallots,dried red chilli, curry leaves and pour this into the curry.
Step 5
Chakka kuru manga curry with boiled rice.
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
