Chakka Ada | Jackfruit Ada
A styled snack dish in Kerala Cuisine, prepared from ripe jackfruit and roasted rice flour. This is a very popular and one of the tastiest dishes in God's Own Country. The tasty Ada is prepared and steamed in banana leaves.
Ingredientsfor 4 servings
- 3 cup Chakka Varattiyath Jackfruit Jam
- 2 cup Rice powder
- 1 Tspn Cardomom powder
- Plantain leaves, to taste
- 1/4 cup Copra pieces dried coconut
Preparation
Step 1
Get the Chakka varattiyath (Jackfruit Jam) in a vessel/big bowl and add the Cardamom powder and Copra pieces.
Step 2
Add Rice powder also and mix it well.
Step 3
Make small balls with this Ada mix and put one ball each in the leaves and spread the Ada mix on leaves (depends on the ball size). Use small pieces of plantain leaves as shown in above picture. Also keep the leaves some time in hot water or on sun light or show on low heat of stove, so that the leaves turn soft and they do not get torn and is easy to spread the Ada mix and fold them accordingly.
Step 4
Fold all sides of the leaves as shown in pictures.
Step 5
Keep them aside.
Step 6
Heat about 2 cups of water preferably in an Idly maker. Then install the idly stand in the Idly maker and keep the Ada mix filled leaves in the Idly stand. Cover it and let it go for about 10 – 15 minutes in medium flame.
Step 7
When the mix is cooked well, turn off the heat and change the Adas into a serving plate.
Step 8
The delicious and nutritious snack is ready and it can be served preferably in the after-noons/evenings.
Tip
The binding point is everything — cook the mixture just until it holds shape when pressed. Overcooked, it turns hard; undercooked, it crumbles.
