Cauliflower Dry Fry
Slow-roasted in coconut oil with a generous hand of spices, this mixed fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 2 servings
- 1 kg Cauliflower — sliced
- 2 nos Onions — sliced
- 1 nos Capsicum — chopped
- 4 nos Green chillies — slit
- 4 Cloves Garlic — mashed
- 1 piece Ginger — mashed
- 2 tbsp Tomato sauce
- 2 tsp Soya sauce
- 4 tbsp Oil
- Salt, to taste
Preparation
Step 1
For preparing cauliflower dry fry, Heat the oil in a china dish and roast garlic and ginger in it.
Step 2
Next, add onions and chilly to it. Fry well.
Step 3
Add the cauliflower pieces to it and fry again. Close the lid and Let it cook for 10 minutes.
Step 4
Next, add rest of the ingredients: capsicum, soya sauce, required salt and cook well.
Step 5
Cauliflower fry is ready. Serve hot.

Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
