Carrot Rava Ladoo
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 1 servings
- 1 cup Rava roasted without oil
- 1/2 cup Carrot — grated
- 1/2 cup Dried shredded coconut
- 1/2 cup Sugar
- 1 cup Hot milk
- 2 tbsp Raisins
- 3 tbsp Ghee
- 1/4 tsp Cardamom powder
Preparation
Step 1
Fry the raisins in hot ghee and set aside.
Step 2
Add grated carrot and fry it until water has disappeared completely.
Step 3
Add rava and fry for sometime.
Step 4
To this, add shredded coconut and sugar and fry for few minutes.
Step 5
Add raisins and cardamom powder and Stir everything together thoroughly.
Step 6
Remove the pan from the stove.
Step 7
Add a portion of hot milk to a portion of the mixture and Stir everything together thoroughly.
Step 8
Dip your hands in cold water and take each portion of the mixture and make lemon size balls.
Step 9
Makes approximately 16 ladoos.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
