Carrot Egg Thoran
Finely chopped egg stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 4 servings
- 2 nos Carrot — grated
- 4 tbsp Grated cocnut
- 4 nos Green chilly
- Salt, as needed
- Curry leaves, a few
- 2 tbsp Oil
- 1/4 tsp Mustard seeds
- 1 nos Egg
Preparation
Step 1
In a roomy mixing bowl, and add grated carrot, coconut, green chilly, curry leaves and salt.
Step 2
Stir everything together thoroughly with your hand.
Step 3
H eat a pan, allow to crackle mustard seed and add the carrot mix.
Step 4
Cook well and allow to cook with lid closed. Continue cooking for 6 to 8 minutes.
Step 5
Now after the carrot is cooked well, pour one egg into the stir fry.
Step 6
Stir everything together thoroughly and Continue cooking for 4 to 5 minutes continuously. Turn off the heat.
Step 7
Healthy and Carrot mutta thoran is ready.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
