Carrot Custard Bake
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 2 servings
- 300 g Carrot — grated
- 11/2 tbsp Butter melted
- 2 nos Egg separate white and yolk
- 1 tbsp Custard powder
- 1/2 cup Milk
- Sugar, to taste
- Water, to taste
Preparation
Step 1
For preparing carrot custard bake, first cook the grated carrot in little water. Allow the water to evaporate completely.
Step 2
When the carrots are done, grind well.
Step 3
Meanwhile, mix together melted butter, egg yolks, custard powder, milk and sugar. Combine the mixture with the blended carrot.
Step 4
Beat the egg whites and fold in the carrot mixture.
Step 5
Transfer the mixture into a buttered baking dish. Bake at 350 degrees for 30-45 minutes until it rises and is lightly browned.

Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
