Caramel Custard In Kerala Style - For Kids
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 5 servings
- 2 cup Milk
- 4 tbsp Sugar heaped
- 4 nos Eggs
- Vanilla A few drops
- 3 tsp Sugar for caramelizing
Preparation
Step 1
Heat the sugar for caramelizing in a baking dish for a few seconds on a low flame, until it melts and gets burnt.
Step 2
Turn the dish quickly and carefully to ensure that the caramel spreads evenly over the bottom and sides of the dish. Set aside.
Step 3
Beat the eggs well.
Step 4
Add milk, sugar and vanilla essence to it. Make sure that the sugar dissolves completely.
Step 5
Strain it(to remove the balancers of the egg) to the caramelized dish.
Step 6
Cover the mouth of the dish with a butter paper and cook in a pressure cooker for 10 minutes.
Step 7
When ready, cool the dish with its contents and turn it over on a serving plate.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
