Cabbage Carrot Thoran | Cabbage Carrot Stir Fry

Ingredientsfor 4 servings
- 1 small Cabbage — chopped
- 2 nos Carrot — chopped
- 5 nos Green chillies — slit
- 1 nos Onion — sliced
- 1/2 cup Coconut — grated
- Curry leaves, a few
- 1 small Piece Ginger — grated
- 1/4 tsp Turmeric powder
- 3 nos Dry red chillies
- Plain rice A pinch
- Salt, to taste
- 2 tsp Oil
Preparation
Step 1
Combine finely chopped cabbage, chopped carrot, green chillies, onion, grated cocunut, curry leaves, salt and turmeric powder. Stir everything together thoroughly with hands.
Step 2
Set a pan over medium heat and pour in the oil let the mustard seeds crackle, plain rice, dry red chillies and then add ginger.
Step 3
Add the above mixture to the pan and stir fry in low flame until cooked. Kerala cabbage carrot stir fry is ready.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
