Bitter Gourd Thoran
The everyday side dish that Kerala never tires of. Bitter_gourd is shredded fine, tossed with coconut and spices, and cooked just enough to soften without losing its bite.
Ingredientsfor 4 servings
- 2 nos Bitter gourd Pavakka/Kayppakka
- 1 nos Onion
- 1 tsp Ginger — ground
- 3 nos Green chillies
- 1 cup Coconut — ground
- 1 tsp Mustard seeds
- 1 tbsp Oil
- Turmeric powder A pinch
- Salt, to taste
Preparation
Step 1
Grate bitter gourd into very small pieces.
Step 2
Cut onion, chillies and ginger into very small pieces using a grater.
Step 3
Mix together bitter gourd, grated coconut, ginger, turmeric, onion and green chillies.
Step 4
Warm the oil in a pan or a kadai.
Step 5
Add mustard seeds and allow them to crackle.
Step 6
Add the bitter gourd mixture into the frying pan.
Step 7
Add salt and give it a good stir.
Step 8
Keep the pan covered and cook on a low flame for 7 minutes. give it a good stir.
Step 9
Serve while still hot with plain rice.
Tip
This same method works for almost any vegetable: beans, beetroot, carrot, raw banana — swap the main vegetable and keep everything else the same.
