Bitter Gourd Pickle
Bitter gourd pieces are soaked in tamarind water, drained and fried in hot oil and then final mixed with chilly powder and other ingredients.
Ingredientsfor 5 servings
- 2-3 nos Fresh Bitter gourd Pavakka
- 3 tsp Red chilly powder
- 1/2 tsp Asafoetida powder
- Salt, to taste
- 1 cup Tamarind water
- Coconut oil or refined oil As reqd for frying pavakka
Preparation
Step 1
For preparing bitter gourd pickle, first clean the bitter gourd and cut into thin pieces.
Step 2
Put the cut bitter gourd pieces in the tamarind water for about five hours,.
Step 3
Also add some salt into the tamarind water.After about five hours, remove the tamarind water and dry the bitter gourd pieces for about 2 hours in the sun light.4)Heat the oil in a frying pan and fry the dried bitter gourd. When the bitter gourdpieces turn golden in colour take it out from the pan and allow to cool it.
Step 4
Then mix red chilly powder, asafoetida powder and salt with the fried bitter gourd pieces.The fried bitter gourd pickle is ready and this can be used for lunch or dinner.
Tip
The jar must be completely dry and the spoon must be clean every time you take from it. Any moisture introduces bacteria and spoils the pickle.
