Besan Cake
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 5 servings
- 1 cup Besan Kadala mavu
- 1 cup Ghee
- 3 cup Sugar
- 1 cup Milk
- 1 cup Coconut — grated
Preparation
Step 1
Mix all the ingredients together in a vessel. Make sure that no lumps form.
Step 2
Give it a good stir and put the vessel in flame and continue stirring.
Step 3
When the mixture leaves the sides of the vessel, take it off the heat.
Step 4
Pour the besan mixture into a plate greased with ghee.
Step 5
After few minutes, you can cut in desired shapes.
Step 6
Tips: Adding more ghee will increase the softness.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
