Beef With Spring Onion Fried
Beef cooked the Kerala way — with patience, a heavy hand of spices, and enough coconut oil to make the purists happy. The meat is slow-cooked until it is tender enough to fall apart, then finished with intensity.
Ingredientsfor 3 servings
- 1/2 kg Beef
- 2 nos Onions finely sliced, big
- 5 tbsp Vegetable/Corn Oil
- 1 Stalk Curry leaves
- Turmeric powder A pinch
- 1/4 tsp Pepper powder
- 1/2 tsp Coriander powder
- 1/4 tsp Garam masala powder
- 1/4 tsp Ginger paste
- 1/4 tsp Garlic paste
- 2 tbsp Soya sauce
- Spring onion — finely chopped
- Salt, to taste
- 11/2 tsp Coriander powder
- 1 tsp Chilly powder
- 3/4 tsp Ginger paste
- 1 tsp Garlic paste
- Salt, to taste
Preparation
Step 1
Cut beef into small pieces.
Step 2
Mix together the ingredients for marinating the beef, along with water to form a paste.
Step 3
Apply it onto the beef pieces and marinate for about 30 minutes.
Step 4
Heat 3 tbsp of oil in a pan.
Step 5
Fry the marinated beef, till beef is almost done. Set aside.
Step 6
Heat a little oil in a pan.
Step 7
Cook onions, till they goes golden brown.
Step 8
Add pepper powder, turmeric powder, coriander powder and garam masala powder, curry leaves and ginger and garlic paste.
Step 9
Cook for about 2 minutes.
Step 10
Add the fried beef and cook, till beef is done.
Step 11
Do not add water.
Step 12
Add spring onions and soya sauce.
Step 13
Stir everything together thoroughly and cook for 3 - 4 minutes.
Step 14
Season with salt.
Step 15
Serve while still hot with indian breads or rice.
Tip
Pressure cooking first saves time, but do not skip the dry-roasting step after — that is where the Kerala beef fry gets its signature dark, caramelised crust.
