Beef Varattiyadhu | Beef Roast
Kerala-style dry fry where beef is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 6 servings
- 1/2 kg Beef
- 1 tsp Turmeric powder
- 1 tbsp Red chilly powder
- 2 tbsp Coriander powder
- 1 cup Shallots
- 1 tsp Ginger — chopped
- 1 tsp Garlic — chopped
- 2 tbsp Green chilly — chopped
- 1 tsp Garam masala
- Curry leaves One hand full
- Oil — for frying
- Salt, to taste
Preparation
Step 1
In a pressure cooker add the meat, chilly powder, coriander powder, turmeric powder, garam masala and salt. Cook for 4-5 whistles or until done. Open the lid, keep the flame high and allow to dry if there is water.
Step 2
Pan-fry in oil.
Step 3
Warm the oil in a pan and cook shallots in it for 5 minutes.
Step 4
Add the remaining ingredients: chopped ginger and garlic, green chilly, curry leaves and cook again another 5 more minutes.
Step 5
Add cooked meat and Fold everything together gently for a minute.
Step 6
Hot spicy beef roast is ready to serve.
Tip
The coconut pieces should get slightly crispy along with the beef. They add a textural contrast that makes the dish.
