Beef Olatherachi
Beef cooked the Kerala way — with patience, a heavy hand of spices, and enough coconut oil to make the purists happy. The meat is slow-cooked until it is tender enough to fall apart, then finished with intensity.
Ingredientsfor 6 servings
- Oil
- 1 kg Beef
- 100 g Onion
- Ginger garlic paste - 4 tsp
- 1 tbsp Chilly powder
- 1 tbsp Coriander powder
- 1/4 tsp Pepper
- Turmeric powder
- Salt, to taste
- 1 tsp Garam masala
- Coconut slivers
Preparation
Step 1
In a pressure cooker, heat coconut oil.
Step 2
Fry in hot oil the finely chopped coconut and remove. Set aside.
Step 3
Add ginger-garlic paste, onion, beef, chilly powder, coriander powder, turmeric powder, pepper, garam masala and salt.
Step 4
Add little water into it and cook upto 8 whistles.
Step 5
Warm coconut oil in another large vessel.
Step 6
Let the mustard seeds crackle and cook curry leaves.
Step 7
Add fried coconut and cooked beef.
Step 8
Dry roast as needed.
Tip
Pressure cooking first saves time, but do not skip the dry-roasting step after — that is where the Kerala beef fry gets its signature dark, caramelised crust.
