Beef - Kunjulli Varattiyathu
Slow-roasted in coconut oil with a generous hand of spices, this beef fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 2 servings
- 200 g Beef
- 50 g Shallots
- 1/2 tsp Ginger paste
- 1 tsp Garlic
- 4 nos Green chilly
- 1 nos Tomato
- 2 nos Cardamom
- Cinnamon A small piece
- 1/2 tsp Meat masala
- 1 tsp Chilly powder
- 1 tsp Coriander powder
- 1/4 tsp Turmeric powder
- Coriander leaves, to taste
- Water, to taste
- Oil, to taste
- Salt, to taste
Preparation
Step 1
Heat the oil in a presser cooker and cook shallots and cardamom in it.
Step 2
Add ginger, garlic, cinnamon, green chilly and tomato and cook it, stirring for 5 minutes.
Step 3
Add masalas and salt.
Step 4
Cook it with beef and water as needed.
Step 5
Add coriander leaves.
Tip
Thin strips cook faster and develop more crispy surface area than thick cubes. Cut against the grain for tenderness.
