Beef Achar | Tasty Beef Pickle
A tangy, spicy condiment that keeps for weeks and adds a sharp kick to any Kerala meal. Made with care and stored in a clean jar, this pickle gets better as the days pass and the flavours meld together.
Ingredientsfor 4 servings
- 1/2 kg Beef
- 1/4 kg Garlic Cloves
- 2 tsp Ginger garlic paste
- 3 tsp Pepper powder
- 2½ tsp Chilli powder
- 2 tsp Coriander powder
- ½ tsp Turmeric powder
- ½ cup Curry leaves
- 1 tsp Garam masala powder
- 2 tsp Vinegar
- ½ tsp Asafoetida (Kayam)
- 2 tbsp Oil
- Salt, to taste
Preparation
Step 1
Marinate the meat with ginger garlic paste, salt, turmeric powder and vinegar.
Step 2
Put in the cooker and cook until partly tender.
Step 3
Warm the oil in a kadai and fry the cooked beef.
Step 4
Remove into a bowl.
Step 5
Add curry leaves, chilli powder, turmeric powder, garam masala powder and salt in left out oil. give it a good stir in low flame.
Step 6
Add garlic cloves and stir till it turn light golden colour.
Step 7
Add fried beef and Stir everything together thoroughly with all the masala.
Step 8
Add some pepper powder and vinegar and stir.
Step 9
Remove in a bowl.
Tip
The jar must be completely dry and the spoon must be clean every time you take from it. Any moisture introduces bacteria and spoils the pickle.
