Beans Vattichathu
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 3 servings
- 1/2k g Beans
- Salt, to taste
- Asafoetida powder A pinch, Kayapodi
- Chilly powder, to taste
Preparation
Step 1
For preparing beans vattichathu, cut the beans into small pieces.
Step 2
Mix 3 tbsp salt in 1 liter water.
Step 3
Soak the cut beans in this salt water and drain it.
Step 4
Half cook the beans in a steam vessel.
Step 5
Grind chilly powder, salt and asafoetida and apply it on the beans. Set aside for 3 to 4 hours.
Step 6
Dry it in sunlight for some time.
Step 7
Store it in an air tight container and fry it in oil according to the amount required.
Step 8
Beans vattichathu is ready. Serve with rice as a side dish.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
