Beans Stir Fry
Pan-fried until the edges go dark and crispy, this beans fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- 200 g French beans
- 1 nos Onion roughly — chopped
- 2 nos Green chillies split in the middle
- Salt, to taste
- 2 tbsp Oil — for cooking
Preparation
Step 1
String the beans and slice thinly.
Step 2
Warm the oil in a pan, stir in onions fry for a few seconds and add the chillies.
Step 3
Stir in French beans and sautT. Lower the heat, and cook the beans without adding water. (with the lid on).
Step 4
Season with salt and serve.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
