Beans Fry
A proper Kerala fry — beans tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 4 servings
- 250 g Beans
- 3 nos Red chillies (Kollamulaku)
- 1 tsp Black gram (Uzhunnuparippu)
- Asafoetida — optional (Kayam)
- Salt, to taste
- 1/4 tsp Turmeric powder
- 1 tsp Oil
- Curry leaves A, a few
Preparation
Step 1
Cut the beans into small pieces of about 1 inch size.
Step 2
Wash the beans and put them a bowl along with salt, turmeric powder and cook in low flame.
Step 3
Cook them till they turn soft. Once it has softened, take it off the heat.
Step 4
Drain the vegetable and set aside.
Step 5
Pour oil into a pan and heat it and fry the red chillies, black gram and asafoetida for a few seconds.
Step 6
Add cooked beans and fry for 2 minutes.
Step 7
Add curry leaves. cook until beans is fried.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
