Beans Coconut Curry
A deeply satisfying beans coconut curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 3 servings
- Beans : 100 gm
- Onion : 5 nos
- Green chilli : 2 nos
- Tomato : 1 no
- Garlic : 5 nos
- Chilli powder : 2 tsp
- Coriander powder : 1 tsp
- Turmeric powder : 1/2 tsp
- Coconut : 1 cup — grated
- Water, to taste
- Salt : for taste
Preparation
Step 1
Add 2 tsp oil in a pan and add small onion, green chilli one by one cook well.
Step 2
Add beans and tomato cook well.
Step 3
Grind coconut and garlic to smooth paste.
Step 4
Add chilli powder, coriander and turmeric powder and Stir everything together thoroughly.

Add required amount of water for gravy as you need and allow it to boil.
Step 7
Add coconut paste to the same and cook well till the oil separates.
Step 8
Ready to serve.
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
