Banana Walnut Cake
Old-fashioned Kerala sweetmaking — no shortcuts, no substitutes. Jaggery, ghee, and coconut come together through slow cooking and patience into something far greater than the sum of their parts.
Ingredientsfor 5 servings
- Butter : 125 gm
- Sugar : ¾ cup
- Walnuts : ½ cup
- Self raising flour : 1 ¾ cup
- Egg beaten : 2 nos
- Bananas : 3 nos
- Bicarbonate of soda : 1 tsp
- 3 tsp Milk : 2
- Boiling water : 1 tsp
Preparation

Cream butter, sugar and water together.

Gradually add eggs, then the mashed bananas.

Dissolve bicarbonate of soda in milk and add flour alternately with milk to banana mixture.

Add chopped walnuts.

Bake at 175° C for 50 - 55 minutes or till the knife / toothpick comes put clean.

Note : After 20 minutes you can place an aluminum foil on top of the cake to prevent the top from burning.
Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
